I'm wondering if I should risk uncancelling my order seeing as I haven't already and don't believe I'll be getting my money back. I just don't want to get charged for them again.

I think the kind of shipping you get depends on when they will ship your order to you. Like 2 day shipping will go out as soon as the DVDs are available so you actually get them in 2 days. Then lower priority shipping will be shipped within like 2 days of the realease date. I don't know if it's true...
